It’s not always easy to find authentic foods from any country–unless you live in New York, of course. But then, there is always the variety of choices. Do you want tamales wrapped in corn husks or banana leaves? Do you want them made with chicken or pork, or the vegetarian variety, as I have chosen today. Tamal de rajas: delicious maza filled with a dab of salsa, spicy pepper, and queso blanco from one of my favorite neighborhood restaurants: de Mole. It’s good, it’s cheap, and it’s the real thing.
